Here's what makes honey almost supernatural as a food: it has almost no water. Bacteria and mold need moisture to grow and spread, but honey typically contains only about 17% water—far too little for most microorganisms to survive. It's like trying to grow a plant in the desert; without that essential ingredient, life simply cannot take hold. This low moisture content is the first line of defense against spoilage.

The second reason is chemistry. Honey is naturally acidic (with a pH around 3.5), which creates an environment hostile to most harmful bacteria. On top of that, bees add an enzyme called glucose oxidase when they make honey, which produces hydrogen peroxide—a natural preservative. Together, these chemical properties create a triple barrier: no water for microbes to drink, an acidic environment, and a built-in antimicrobial compound. It's basically a perfectly sealed fortress against decay.

This is why honey found in Egyptian tombs—some dating back over 3,000 years—remains safe and edible today. As long as honey isn't exposed to too much moisture (which can dilute it and allow fermentation), it will last essentially forever. This property made honey incredibly valuable in ancient times, not just as food but as a medicine and a way to preserve other foods. Even today, it's one of nature's most reliable emergency foods, proving that the simplest preservation method—removing water—is also one of the most powerful.
